Welllllll guys. Looks like all your DMs of harassment worked because you’re finally getting the vegan version of that chocolate chunk shortbread recipe that’s been taking over the WWW. 😜 In a large mixing bowl, whisk together 1/4 cup (50g) cane sugar, 2 tablespoons (26g) brown sugar, and 1 tablespoon (10g) potato starch. Mix in 5 tablespoons (55g) melted (not piping hot) refined coconut oil, 2 tablespoons (30g) unsweetened almondmilk (make sure it’s warm; if it’s cold it’ll cause the coconut oil to solidify), and 1/2 teaspoon (2g) pure vanilla extract. Add a pinch of salt and 1 cup + 6 tablespoons (184g) unbleached flour; mix just until combined. Finally, add 3 ounces of roughly chopped dark chocolate and mix until da chunks are evenly distributed. Pour the dough (it’ll be crumbly) out onto a flat surface lined with parchment paper and roll into a log; cover with plastic and chill for 45ish minutes. Once chilled, roll the log in demerara sugar then slice into 1/2” thick rounds and top with sea salt flakes. Bake at 350°F for 12-14 minutes (just until golden). Eat them all. 🍪 Recipe can easily be doubled. ✌🏼 ETA: Bob’s GF 1:1 flour can be substituted for the unbleached stuff. 😎 If your dough is too wet, add a bit more flour; too dry, a bit more (not cold) almondmilk. 🤘🏼 People have reported successfully using vegan butter in place of the oil so if that’s your jam, knock yaself out.

My Xmas gift to you: OPA’S MASHED POTATOES! Chunk up some potatoes (peel them if that’s your style - Opa was definitely a skins-off kinda guy) then pressure cook* those babies. Drain cooking water then blend the shit out of the wet potatoes with a hand mixer. Add water as needed (milk if you have it but it’s definitely not necessary) and blend blend blend on high speed. Add salt. Maybe some herbs (Opa wasn’t into that kind of shit but I’m a big fan of rosemary). Blend some more. Enjoy. ❤️👴🏼 MERRY MERRY! 🎄 *If you don’t have a pressure cooker just boil the potatoes for ~30 minutes longer than normal.

10 years ago today (!) I spent most of my shift at a shitty department store hanging out with the person the women in my department called, “the handsome gentleman back in men’s shoes.” After that man clocked out, he slipped me a handwritten note with an invite to a truck stop diner.. at midnight. Long story short: I went (even though I was convinced there was a small chance he was going to dismember my body and stuff it in his trunk) (I’ve watched way too much Dateline, man), we moved in together three months later (this photo was taken shortly thereafter), and then we moved across the country a year after that. Six more years went by and eventually the lady who swore she’d never get married (🙋🏼‍♀️) walked down an aisle in a white ensemble and exchanged vows with the man who took her to a freakin’ truck stop diner - on Xmas - for their very first date. 👩🏼❤️👨🏻 Happy 10 big ones, Teej. ✨

Using my favorite @bobsredmill all-purpose flour to whip up a double batch of maple chocolate chunk cookies for one of the local fire stations. [ad] This time of year, I make it a priority to drop dessert at my nearest station on the regular because I’m a firm believer that homemade cookies (or any homemade dessert, really) are a fantastic way to say thank you to the ones who always show up first. 🔥❤️ Head to my story for a coupon aaand to see how the cookies turned out. Then run to your kitchen and make ‘em. And maybe drop some off at the fire station closest to you. 😊✨ bakesgiving BRMcares —————————————————— MA CHOCOLATE CHUNK COOKIES 👉🏼 Preheat oven to 350˚F. Line a large baking sheet with a silicone mat or parchment paper; set aside. In a stand mixer fitted with the paddle attachment, mix 2/3 cup of old-fashioned dark brown sugar and 2 tablespoons of potato starch. Once evenly combined, add 1/3 cup of refined coconut oil, 1/4 cup unsweetened almondmilk, 1 teaspoon of maple flavor, and 1 teaspoon of pure vanilla extract; mix for 30-45 seconds. Add 1/2 teaspoon each of baking soda, baking powder, and sea salt, followed by 1 1/4 cups of Bob’s Red Mill all-purpose baking flour. Mix just until combined then add 2 ounces of roughly chopped dark chocolate and mix on low until evenly distributed. Using a 1/4 cup scoop, drop the dough onto the prepared baking sheet then roll into balls, if desired. Bake at 350˚F for 10-11 minutes, then remove from oven and let cool on baking sheet for 10 minutes. Transfer to a wire rack to cool completely. Cookies can be kept in an airtight container, at room temperature, for up to five days. Makes 8 big cookies.

My go-to cranberry sauce: 12 ounces fresh cranberries, 1/2 cup fresh-squeezed orange juice, 1/4 cup water, zest from two oranges, handful of pecans, and a pinch of sea salt flakes. All into a pot to simmer over medium-low heat until the berries are broken down. Sweeten with pure maple syrup (I usually use ~1/4 cup) once cooled. ENJOY! ⚡️
