Sound on and RELAX! Let Drake and Passionfruit (this is actually a passionfruit and raspberry tart - had to keep it in line with the song ya know) take you into the weekend! I think I've watched this atleast 200 times now 😂 Thank you to Sarah & Hannah for the piping inspo ( @sbpatisserie @woolfie96) This is a sweet pastry case, with a passionfruit cream (its a mix of whipped cream greek yoghurt and passionfruit puree) topped with a mountain of fresh raspberries - maybe a few too many to physically eat, and then more passionfruit cream on top (I tried to colour it red I promise!)

More circle cut outs 🙈 I've been messing around with chocolate "lids" all day and couldn't decide between gold or no gold! Underneath is a milk chocolate ganache tart, raspberry dust, a tempered chocolate lid, with a few dots of raspberry cream and sugar pearls! I didn't cut the circles out quite as cleanly as I would've liked but I should probably use a cookie cutter next time instead of a bowl 😂

Well this cake went from 💩 to 🔥 reallllll fast! It's my nieces 2nd Birthday and I thought I could do one design on the front and one on the back (like a front vs back cake!) but it was a disasssster 😂 I vlogged it so you'll see the mess later this week 😂 Anyways I managed to resurrect it and I'm pretty happy with this! I decided on a turquoise brown butter cake covered in chocolate bars and little chocolate sail on the side. Happy 2nd Birthday Coco ❤️

Some people might argue a dark grey concrete cake is a little bit aggressive for a 2 year olds birthday reunion 😂But I say...they just got a cake that's trendy AF anddd they can look back on it on insta forever! I was majorly late delivering this, so in classic Matt fashion, I rushed the end so put zero effort into the top and just piped some blobs instead 🙈 I should probably leave myself more time in future ha!

I am proud to announce that on the 6th February 2018, I, Topless Baker, made my first recipe that wasn’t shaped like a circle or included pink food colouring 😂😂 It turns out photographing stuff that isn't circular is WAY harder - I give up already 😂Anyways a little trio of sable biscuits with Chantilly cream, coulis and creme pat in the middle which ya can't see and fresh slices raspberries on the side! I think the biscuits needed something jazzier going on...maybe dipped in chocolate or something! Back to pink circles next time though 😜

Chocolate lace cake wrapper! This is one of my favourite cake decorating techniques - if I can't quite be bothered to make another batch of buttercream (9 times out 10 😂) I always make a chocolate cake collar instead! I just released my video tutorial for this technique over on YouTube - the link is in my bio if you want to see! It's super easy and makes any boring old cake look super fancy ❤️

Well I hope you like circles 😂 I did some serious geometric circle googling today and came across the craziest designs! I couldn't resist making another circle pie! I think this one must have over 800 holes 😱 The crust design could've been a bit better but I think by that point I was so hypnotised by circles I couldn't bare to do anything else 😂 Apologies to the people with the small hole phobia...I just love the irregularity!

Birthday Cake Time 🎉🎈Now you know me - when it comes to cake, I usually keep them pretty simple in terms of decoration (slash I'm secretly really lazy) but I absolutely loved @margueritecakes recent cake so I had to give it a go...and I've got to say I am pretty happy with myself!! My cakes don't usually turn out how I imagine but this one was on point! Alright there's a lot going on here so let's go: it's a vanilla cake soaked with a raspberry jam sugar syrup, filled with Swiss meringue buttercream & raspberry jam. I coated it with a red ombré of french meringue buttercream, a chocolate drip, toasted Italian meringue, gold strawberries & raspberries, gold leaf *DEEP BREATH* and a few buttercream kisses dotted around! And p.s I haven't made a drip cake since October....October! What's wrong with me?! Anyways happy birthday Lou, enjoy ❤️

I always get asked…what's your favourite dessert and I’ve given the same answer everyyy time - lemon tart! I basically grew up living off it 😂 I decided to funk it up a bit with some toasted French meringue, a quenelle of raspberry chantilly cream, fresh raspberries and mint. Making the quenelles was..interesting.. but after a few blob like attempts I got it right ha - the secret is a hot spoon! I think I’ll use Italian meringue next time too, it looks much better when its blow-torched. French meringue can look a bit grainy! Enjoy the weekend ❤️

I couldn’t resist making another meringue video! When I started out I thought I would go down the Mont Blanc route with an almond/chestnut cream filling but I had a bit of a shocker trying to make that - so to get it all done before sunset I went with white chocolate whipped cream instead! I also have a funny story about making this which I will post on my insta stories later 😂 Anyways, its a half dome of chocolate meringue filled with chocolate sauce, a white chocolate cream and gold leaf (of-course!) I need to finesse it a little more and add one more element to make it pop but I’ll do that next time ;)

This morning I got up and decided I was going to make a cake, so I made 3 chocolate cake layers - sounds simple right?! Well no…disaster struck and 2 layers stuck to the tin so I was left with one surviving layer. After realising making a cake with only one layer was going to be pretty hard, I decided the only option left was to decorate the living daylights out of the lone survivor - so I went to town! I used a few different round tip nozzles and a french star tip and tried to create a little bed of Swiss meringue dollops! I topped it with tempered chocolate discs and a few fresh basil leaves (I wanted to use mint but basil was the only thing left in the house!) So if your cake is a disaster, just turn your one surviving cake layer into a superstar 😉

If you can guess how many holes I cut out I’ll give you a medal…but seriously I'd love to know as I lost count after about 100 😂 This was probably the most satisfying but painstaking pie I’ve ever made, it look me well over an hour just to make the cut out on top - but it is just soooo pretty!! I feel like I should call it a galactic pie, what do you think?! It looks kinda spacey to me! Can’t wait to see it baked when all the juices burst up through the holes 🍇

A baby shower cake for a baby girl! I always love making a cake that has no requirements other than a colour, and I can basically just make whatever I want ha! This is a super simple vanilla cake with Swiss meringue buttercream! I went for a pink “brushstroke” (I guess you could call it that? I just swiped the buttercream with a palette knife) effect and then used a little edible gold food paint to highlight the edges. I finished it with a tempered chocolate gold splatter sail! 💗

Felt like a needed a bit of fruit so what better way to have it than in a tart! Sweet pastry cases with creme pat, vanilla cream, fresh strawberries, freeze dried strawberries and a few baby basil leaves to finish! I over whipped my cream a lil' which upset me deeply but it still tasted good 😉I used a 580 tip to pipe the little ruffle of cream too ❤️

This is a milk chocolate ganache tart, with a biscuit base and Swiss meringue buttercream kisses on top. I always add a little bit of glucose to my ganache to help is stay extraaaa shiny! Reindeer Macs! 🎄Seeing as I love a bit of macaron decorating, it was time for some Christmas ones! My faveeeee Xmas treat 🎄 So I'm planning on making a Christmas cake tomorrow and I needed some trees to decorate so I thought I'd make some meringue trees! This is such an easy recipe I'll write it out below for you ❤️ Rub the bowl of a mixer with 1/2 a lemon and whisk 3 eggs whites on medium speed with a pinch of cream of tartar. Whisk until frothy, then slowly add 3/4 cup caster sugar 1 Tsp at a time (whisking on high speed) and whisk until stiff and glossy. Add green food colouring and mix together. Add the mixture to a piping bag with a round nozzle and pipe the trees. Add sprinkles on top and bake at 100C/210F for 45m then leave to cool in the oven for 30m!

IT'S CHRISTMAS 🎄🎅🏼I could not be more excited so I thought I would kick it off with a little edible chocolate bauble! I teased this on insta stories yesterday but no one could guess what it was 😉 It's a chocolate mousse frozen into a sphere, covered in a chocolate glaze, loads of gold glitter and finished with a little gold ornament thing (what are they called?!) Just a side note that the gold hanging bit isn't edible in case you wondered :) How satisfying is the glazing part though..I could watch it over and over! I also just released my first Christmas video of the season over on YouTube - check out the link in my bio, I whipped up a fancy little chocolate Yule Log! 🎄
