TrustTheLeaf Sponsored Chocolate Swirled Coconut Banana Bread Makes 1 (4” x 12”) tart loaf Ingredients: 1 cup all purpose flour 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoons salt 1/3 cup Nature’s Way All Liquid Coconut Oil 1/2 cup sugar 1 large egg, lightly beaten 1 teaspoon vanilla extract 2 very ripe bananas, peeled and completely smashed 3 ounces semisweet chocolate, melted 2 tablespoons unsweetened cocoa powder 1. Preheat oven to 350˚F. 2. Lightly grease a 4”X12”tart pan, dust with flour, removing any excess, and place on a baking sheet and set aside. 3. Place flour, baking soda, cinnamon, and salt in a mixing bowl and whisk together. 4. In another mixing bowl whisk together coconut oil, sugar, eggs, and vanilla. 5. Add flour mixture to oil mixture and whisk together until completely mixed together. Fold in the bananas until fully combined. 6. Scoop 1 cup of the batter into another mixing bowl and stir together with the melted chocolate and cocoa powder until mixture is smooth. 7. To assemble: Pour one third of the plain banana bread batter into the bottom of the prepared tart pan and top with 6 tablespoon sized dots of the chocolate batter. 8. Using a skewer, swirl through both batters, evenly, to combine and create and swirled pattern. 9. Repeat steps 7 and 8 two more times until all of the batter has been use and the tart pan is filled, with a decorative marbled pattern on top. 10. Place the banana bread in the oven and bake for 35 to 45 minutes or until a toothpick comes out clean when inserted into the center of the bread. 11. Remove from oven and allow bread to cool for about 10 minutes. Remove bread from tart pan and transfer to a cooling rack and cool for an additional 15 to 20 minutes. Slice and serve.

Roast vegetables for 30 to 35 minutes or until vegetables are browned and crisp on the outside and soft and tender on the inside, tossing occasionally. While whisking, drizzle the oil into the mixture in a slow and steady stream until fully incorporated and blended. Season with salt and pepper. 4. Add a couple spoonfuls of the vinaigrette into a large serving bowl and top with kale and half of the roasted vegetables. Toss together until kale and vegetables are evenly coated. 5. Top with remaining vegetables, pepitas and burrata. Lightly season with salt and pepper and serve with more vinaigrette on the side, if needed.
