During this week’s @bonappetitmag podcast, @lallimusic, Gabe T and I got all noisy, debating the best Super Bowl foods of all time. And somehow, amid all the shouting and name-calling, we stumbled on the idea of a bo ssam pulled-pork sandwich. @potatorolls, cilantro mayo, kimchi, ginger-scallion sauce and a mess of shredded pork shoulder. All a riff on @samsifton’s brilliant riff on the Ssam Bar classic. A post of some sort is going up on the Bon App site shortly, as well as an Insta Story and all that. I was fixing to go out to my local tonight, but with all this bomb cyclone mayhem happening, I reached for a @robertaspizza frozen pizza. Heated it up with some charred scallions, hit it with some red pepper flakes, some honey and a couple crispy olive oil-fried eggs. It was good.

Like a lot of people, I can’t recall a more unrelenting year than 2017. Which, I guess, is all the more reason to appreciate the little things. Best thing I’ve made in a while. @brad_leone’s cast-iron pan pizza (you can search for it on the @bonappetitmag site.) Topped this one with shaved fennel and crumbled sweet-Italian sausage. And instead of dusting the pan with cornmeal and flour, I drizzled it with some olive oil, figuring it would make the crust that much crispier. Which it did!

I wrote a piece for the November issue of @bonappetitmag, talking about all those weeknight dishes I cook when I'm not ordering in or sitting at a bar. As good as (I hope) the recipes are, they're nowhere near as good as the photography and food styling. Being able to work with a quality team is why you (or, at least, I) work in magazines. Always one of the easiest, and best, pasta sauces you cook up. Basically a version of the sungold sauce from @babboristorante that my wife @simoneshubuck started riffing on years ago when she worked there. Bunch of olive oil in a pan, smashed garlic, med-low heat till caramelly brown. Add a mess of good, peak-season, whole, small tomatoes. Salt. Summer of med-low heat till they start to release their jammy juices. Smash some with the back of a wooden spoon to move things along. A bunch of chopped fresh basil. It's done when it looks like this. To serve add a splash of pasta water and a knob of butter. Pasta straight into the pan. Toss and toss. Some parm at the end wouldn't be the worst. Riffing on @bonappetitmag's Best Ever Ribs, as I've been doing forever. This time, made a rub of salt, pepper, brown sugar, dried mustard, cayenne, paprika, garlic powder and onion powder. Rubbed up the racks, wrapped each in foil, baked at 300 degrees on a sheet tray for three-plus hours. Let cool. Collected all the juices, cooled, skimmed the fat. Blended with store bought sweet barbecue sauce. Med-hot grill, crisp up the ribs and shellack with the sauce. Turn, turn, turn. Hack up, serve.

Roasted broccoli. Never not good. 425 degree oven, salt, olive oil, chile flakes, roast on one side only. Finish with lemon juice, some more olive oil, maybe some Maldon.
