{Recipe} Baked garlic cauliflower stems and florets INGREDIENTS: Cauliflo including stems Garlic - 6 cloves Salt Pepper Coconut Oil- 2tbsps Lime juice-1tbsp PREPARATION: 1)Cu the cauliflower into small florets and stems. Wash it properly. 2)Add them to a bowl with some salt, pepper lime juice and coconut oil. 3)Finely chop up the garlic cloves and add to the bowl. Mix well. Marinate for half hour. 4)Bake it in the oven in a tray for 15-20 minutes at 210°C. Turn sides at the halfway mark. Add more salt if required. Serve as shown. {Recipe} Creamy spinach chicken gravy INGREDIENTS: Chicken thighs-9 Spinach-1 cup Coriander seeds-1tbsp Cumin seeds-1/2tsp Garlic-6-7 cloves Curd-4tbsps Ginger paste-2tsps Cream-2tbsps Water Tumeric powder-1/2tsp Salt Pepper Oil Lime juice-1tbsp Red chilli powder-2tsps Green chillies-5 PREPARATION: 1)In a saucepan, add some oil and add the coriander and cumin seeds. Sauté till golden brown along with some garlic cloves. After the sauté, add it to the blender draining out the oil. Chop up some onions and 3 green chillies and add it to the saucepan with the remaining oil. Add some salt and turmeric powder. Sauté till golden brown. 2)In a bowl, add the chicken thighs without the skin. Add the curd, chilli powder, ginger paste and salt. Marinate for 20 minutes. 3)Now add the spinach to the mixture along with some pepper and 2 green chillies. Add some water too. Blend this mixture fine till smooth. 4)Now the chicken with the marinade is added to the onion mixture. Cook on low flame for 5 minutes. Then add the spinach mixture to this chicken as well. Add the lime juice as well. Mix well. 5)Now cook the chicken spinach gravy for 45 minutes on low flame. Then add the cream and mix well and cook for 2 minutes. Serve as shown. {Recipe} Beef Kheema and Peas Rice INGREDIENTS: Ground beef-500g Onion powder-2tsps Peas-1 cup Coriander seeds-2tsps Salt Pepper Oil Red chilli powder-2tsps Turmeric powder-1/2tsp Lime juice-1tbsp Leftover ghee rice-1 cup Milk-2tbsps PREPARATION: a saucepan , add some oil along with coriander seeds and onion powder. Sauté for few minute's till the seeds and oil become brown. 2)Then add peas to the mixture and mix well along with salt, pepper and lime juice. 3)Now add the ground meat to the mixture. Add turmeric and red chilli powder. Cook for 10-15 minutes at high flame till the beef is cooked. Then add some milk and mix well. Add any other spices if required. 4)Add this beef kheema to the leftover rice and mix well cooking at low flame for 10 minutes. Serve as shown. {Recipe} Eggplant and Chickpeas curry INGREDIENTS: Eggplants- cup Onions-2 Coriander seeds-1tbsp Oil Cumin seeds-1tsp Turmeric powder-1/2tsp Garam masala-1tbsp Red chilli powder-1tbsp Green chillies-4-5 Garlic paste-1tbsp Ginger paste-1tbsp Water Salt Pepper chickpeas are soaked in water overnight and once large, they are boiled using a pressure cooker. 2)In a saucepan, add some oil, then add coriander and cumin seeds and sauté over the flame till it becomes brown. 3)Slice up the onions and add them after this along with some salt and sauté till golden brown and translucent. Add ginger and the garlic paste along with garam masla, turmeric, pepper, red chilli powder, green chillies and mix well. 4)Now chop up the eggplants into small cubes. Add them to the onion mixture and cook them till the eggplant becomes softer. Then add some water in few intervals to make sure that the masala and flavours are properly mixed. Cook for about 20 minutes on low flame. 4)Then add the chickpeas towards the end and cook it for another 10 minutes so that it mixes well. Serve as shown. {Recipe} Spicy fish cooked in a rich coconut gravy INGREDIENTS: Fish Fillet-1 Spinach-1 cup Coconut Milk-1cup Turmeric powder-1/2 tsp Salt Pepper Garlic paste - 1tbsp Coconut pieces- 5-6 Onion powder-1tbsp Coconut oil Red chillies-6 PREPARATION: 1)Fir cut the fish fillet into smaller pieces and season them with salt and pepper. 2)Fry them on a pan with coconut oil and fry till golden brown on both sides. Add the spinach and mix well on low flame. 3)Now in a cup add the coconut milk, onion powder, garlic paste and mix well. Add this to the fish and spinach mixture along with some slit red chillies. Add some turmeric powder too and mix slowly making sure that the fish fillets don't break. Let it cook for 10-15 minutes on low flame so that the gravy becomes thick and the flavours enter the fish. 4)Now fry some coconut pieces on another pan with some oil till it becomes brown on both sides. Add this to the mixture. Serve as shown. {Recipe} Creamy Peas and Carrot curry INGREDIENTS: Peas - 1 cup Carrot-2 Onion-2 Red chilli flakes Chipotle peppers in adobo sauce-2tsps with one large pepper Coconut milk-1 cup Oil Salt Butter Pepper Garlic paste - 1tsp Water PREPARATION: 1)On a pan, add some butter and sauté chopped onions on the pan till they are translucent. Add salt and pepper and sauté well. 2)Now add the peas to the mixture. Slice up some carrots and add them too. Sauté till the peas are cooked and carrots become softer. 3)In another bowl, add coconut milk, garlic paste, chipotle peppers in adobo sauce and mix well. Add some salt and pepper. Also add some water. 4)Now add this mix to the mixture. Add some red chilli flakes too and any other spices if required. Cook for 10-15 minutes so that the gravy becomes more thick. Serve as shown. {Recipe} Kerala style spicy chicken fry INGREDIENTS: Chicken breasts boneless - 2 Red chilli powder-2tsps Fennel seeds-1tsp Garlic cloves- 2-3 Pepper Salt Coconut Oil Curry leaves Lime juice Green chillies-5 PREPARATION: 1)Cut the chicken breasts into small cubes. Now in a bowl, add the chicken along with salt, pepper, lime juice, red chilli powder. Marinate for half an hour in the fridge. 2)Slit the green chillies in half. Then on a pan , add some cocunut oil and sauté the slit green chillies and some curry leaves(more curry leaves depending on your taste) for a few minutes. Add the fennel seeds and few chopped up garlic cloves as well and sauté for a minute or two. 3)Then add the chicken onto the pan and fry till reddish golden brown in colour. 4)Then fry some more curry leaves in coconut oil and top the chicken off with it. Serve as shown. {Recipe} Creamy peanut flavoured peas and chickpeas curry INGREDIENTS: Chickpeas- can Peas-1 cup Peanuts-10 Salt Lemon pepper seasoning-1tsp Onion-1 Garlic cloves-7 Milk-1/2 cup Oil Dried red chillies-4 Cream-1tbsp (optional) Water PREPARATION: 1)Chop up the onions and dried red chillies. Then sauté this on a pan with oil along with the peanuts , garlic cloves and a handful of chickpeas and peas. Add the lemon pepper seasoning and some salt. Sauté till the onion becomes a bit translucent. Allow this mixture to cool before putting in the blender. 2)Now in a blender, add some warm water, then add the above sautéed mixture to it. Blend it to a fine paste. Add some milk as well. Add some salt. Keep it aside. 3)Now on a pan, add some oil, chilli flakes and sauté. Then add the remaning chickpeas and peas and cook till they are semi-fried. Add some lemon pepper here as well if needed. 4)Now take the blended gravy and add it to the pan with the sautéed chickpeas and peas. Add cream if required. Cook for 10 minutes and then let it cool for some time. {Recipe} Honey Garlic Shrimp served in vietnamese rice paper rolls aling with a sweet and sour shrimp sauce INGREDIENTS: Shrimps-25 cloves-6 cloves Chipotle peppers in adobo sauce-1tsp Salt Pepper Rice paper sheets-3 Purple Cabbage Parsley leaves Oil Water Sesame seeds Vinegar-1tbsp Shrimp powder-1tbsp Soy sauce-1tbsp Lime juice Butter-2tbsps PREPARATI devein the shrimps. Then add them to a bowl and add some vinegar and salt. Keep it in the fridge for an hour. 2)Then, add some honey , garlic cloves, chipotle sauce, lime juice, soy sauce, salt, peper and some oil. Mix well. Marinate in the fridge for an hour. 3)Now take the shrimp and fry them on a pan with some oil. Fry till golden brown and cooked on both sides or till the shrimps are cooked and soft. Keep the marinade aside for the sauce. 4)Now in a saucepan add the marinade, butter, shrimp powder, sesame seeds and chopped parsley leaves. Cook it over the flame for 10-15 minutes. Add little water if required. 5)Then take some rice rolls, damp it with some warm water. Then place the shrimps on the rice sheet. After this add some parsley leaves and some chopped up purple cabbage as well. {Recipe} Fried sautéed chicken in a thick spicy peanut butter gravy INGREDIENTS: Boneless chicken breasts -3 pieces cut into small cubes Peanut butter-2tbsps Paprika-2tsps Ga cloves-7 Coconut Milk-1/2 cup Crushed Red chilli paste-2tsps Oil Salt Pepper Pa leaves PREPARATION: 1)In a bowl, add paprika, salt, pepper and chopped up garlic cloves. Coat this mixture with the chopped boneless chicken pieces. Keep it aside. 2)Now in another bowl, add the coconut milk, peanut butter, red chilli paste and the above mentioned spices. Mix it well. 3)Now on a pan, add some oil and fry the chicken pieces. Once golden brown on both sides, add the liquid mixture created in the other bowl and mix well on medium flame. {Recipe} Creamy avocado fish gravy INGREDIENTS: Fish fillets - 2 Avocado - 1 Garlic cloves - 8 Onion powder-1tsp Milk-1 cup Salt Pepper Oil Parsley leaves Green chillies-3 PREPARATION: 1)Sea two big fish fillets with pepper and salt. Cut them into smaller pieces. Fry them on a pan with oil. {Recipe} Sautéed butter garlic spinach and cheese stuffed chicken breasts INGREDIENTS: Chicken breasts-3 Spinach-1 cup Butter Red chilli flakes Garlic cloves-7 Pepper Salt Mozarella cheese Oil Italian seasoning-1tsp PREPARATION: 1 the chicken breast pieces and butterfly cut them into two pieces. Fry them on a pan with some oil after seasoning them with salt, pepper and italian seasoning. Cook both sides of each slitted piece flat on the pan till it becomes tender and cooked on both sides and little brown in colour. 2)On another pan, add some butter, chopped up garlic cloves and dried red chilli flakes. Then sauté the butter for a minute before adding the spinach. Then sauté the spinach till it shrinks and is cooked. 3)Now add the spinach mixture to the opening created in the chicken along with mozarella cheese on either side of the spinach filling. 4)Place it on the pan with some more butter and heat it till golden brown on both sides. {Recipe} Smoky chipotle potatoes peas sautéed in adobo sauce INGREDIENTS: Potatoes-3 Peas-1 cup Lemon pepper seasoning-1tsp Salt Oil Chipotle peppers in adobo sauce-2tbsps Lime juice-1tsp Garlic cloves-7 PREPARATION: 1)Cut the potatoes into smaller cube shaped pieces. In a glass bowl, add the potatoes and some salt. Boil in the microwave for 3-4 minutes or till it becomes a bit soft. After boiling, allow it to cool for some time. 2)Then on a pan add the peas along with some oil, salt and lemon pepper seasoning. Cook till the peas are fried and turn a darker shade. Keep it aside once done. 3)Once the potatoes are cooled, add them to bowl with the chipotle peppers in the adobo sauce with 1-2 peppers as well. Add chopped up garlic cloves and salt. Add some lime juice as well. 4)Fry the potatoes on a pan with oil till they are completely soft and golden brown on both sides. Before it's completely cooked, add the peas and sauté with the potatoes. Serve as shown. {Recipe} Chipotle grilled chicken soft tacos topped with a creamy avocado sauce/dip INGREDIENTS: Chicke breasts-3 Chipotle in adobo sauce-1 tbsp Salt Garlic powder-1/2tsp Avocado-1 Yoghur cup Lime juice-1tbsp Cilantro-1tbsp (optional) Garlic cloves-5-6 Pepper Green Chillies 3 Lemon pepper-1tsp Italian seasoning of oregano and thyme- 1.5tsps Shredded purple cabbage Soft tacos - 3 Onion powder-1tsp Chipotle Ranch dressing PREPARATION: 1)In a blender, add half or three fourths of the avocado, garlic cloves , salt, yoghurt, green chillies and cilantro along with lime juice. Blend this into a fine smooth sauce/dip. 2)In a bowl, add chopped up chicken breasts(cubes), the chipotle peppers in adobo sauce along with garlic powder, lemon pepper, salt and onion powder. Marinate for 20 minutes in the fridge. 3)Now fry it on a pan with some oil till the chicken cubes are golden on all sides and cooked well and tender. Add pepper and the italian seasoning towards the end to the chicken cubes. 4)Heat up some soft tacos on pan. Add the chipotle ranch as the base sauce. Then the chicken cubes are stuffed on top of this. Then the purple cabbage is added. 5)It is topped off with a generous amount of the avocado sauce made in step 1. {Recipe} Baked Srirachia Chicken thighs served with a side of potato, cabbage, chickpea, lettuce and feta cheese salad INGREDIENTS: Chicken thighs- 900gm Srirachia powder-3tbsps Honey- 2tbsps Salt Pepper Garlic powder-2tsps Onion powder-1tsp Paprika-2tsps Soy sauce-1tbsp Fresh lime juice - 1tbsp Potatoes-3 Purple cabbage Lettuce Feta cheese-100gm Garlic Mayonnaise - 3tsps Chickpeas-1 can Oil Salad seasoning of basil and thyme-1tbsp PREPARATION: 1)In a bowl, add the above mentioned spices and powders till Potatoes. Mix well. Add the chicken thighs to this mixture and marinate in the fridge overnight or for about 5-6 hours. 2)Now after the marination is over, put it on a baking tray and bake it in the oven at 200°C for 40 minutes. Flip it at the half way mark. 3)While the chicken is getting baked, in a bowl add the canned chickpeas, purple cabbage, cut up lettuce and garlic mayo. Put this bowl in the fridge. 4)Then boil the chopped up potatoes in the microwave for 4-5 minutes or till they become soft. Cool the potatoes outside for some time. Now add this to the salad mixture. Put it in the fridge to cool off more. 5)Add the seasoning for the sald along with the feta cheese towards the end amd mix well. Add some salt and pepper as well or any other ingredients if required. {Recipe} Marinated Chicken drumsticks served with a spicy peanut sauce INGREDIENTS: Chicken Drumsticks-6 Egg-1 Paprika-1tb chicken masala powder-1.5tbsps Lime juice Ginger garlic paste-2tsps Onion powder-1tsp Turmeric powder-1/2 tsp Salt Pepper Oil Pimentos P butter Mozarella cheese PREPARATION: 1)In a bowl, add the above mentioned spices and powders. Add the lime juice and the egg and beat it well till it becomes a thick smooth paste. Add some oil too. Now add the chicken drumsticks to this marinade and marinate in the fridge for 3 hours. 2)Now grill the chicken drumsticks on a grill pan, make sure all the sides are golden and cooked well. 3)With the rest of the marinade, add peanut butter and mozarella cheese along with some oil. Heat it on pan for 15 minutes. Make sure the sauce is thick and smooth. Top the chicken drumsticks with some pimentos. Add any other ingredients if required. Serve as shown. {Recipe} Chipotle and Red chilli omelette pizza topped with chipotle sautéed chicken, onions and shredded cheese INGREDIENTS: Chicken breasts-2 Chipotle peppers in adobo sauce-1 tbsp Red chilli pickle paste-1tbsp Salt Pepper Eggs-2 Shredded cheese Oil Lemon pepper seasoning-1 tsp Onion-a handful Onion powder-1tsp Garlic powder-1tsp Paprika-2tsps Italian seasoning-1tsp PREPARATION: 1 a bowl, add chicken breasts after chopping them into small cubes. Then add the pickle and the chipotle peppers in adobo sauce along with all the spices mentioned above except for the italian seasoning. 2)Add two eggs to this bowl and mix well. Now on pan add some oil and seperate out the chicken and fry them on pan with the beaten eggs remaining back in the bowl. 3)Fry the chicken cubes till fried well on both sides and tender. Then keep them aside. Now on another pan, add the eggs and make an omelette base. Once cooked, add the chipotle ranch on top of the base. 4)Now add the chicken cibes on top. Add some chopped up onions along with the shredded cheese and heat in the oven for a few minutes to melt the cheese. Add the italian seasoning in the end on top of the omelette pizza. Serve as shown.
