Lobster risotto is warm and comforting for this early start to the weekend. The lobster can totally be replaced with all types of fish, all types of greens, or mushrooms/veggies - it's a win-win. #glutenfree

Often times it's the side dishes and appetizers that are more enjoyable and tasty than the main part of the meal. Here is a quick 4-ingredient fry-salad that I'm pairing off with a grilled steak. The ingredients: green beans, sprouts, soy sauce and apple juice. And some crack black pepper. That's it! I don't actually add a lot of soy sauce but enough for taste and contrast. I love this fry-salad because it takes less than 5 minutes and it's so so crunchy!!! xx Leigh

This is the reason I love Instagram, the people and families you meet and connect with. I feel like I have friends all over the world. And as parents of different colours and race, we are ALL doing the same thing. For the messages I just got in the last two hours - thank you! Here is the process/recipe once more: In a cupcake tray, butter the bottoms with unsalted butter or olive oil. Use spinach leaves as the base, covering the bottom and most of the sides. Include chopped avocado, cherry tomatoes, quinoa, cheddar cheese, red onion and a little cracked black pepper. (The filling is all up to you - choose your favourites.) In a separate bowl, beat three eggs and fill the tray. Bake until golden and to your liking. Quick, easy and nutritionally delightful! xx Leigh

You know that face that mommies and daddies sometimes have when you bump into them someplace? I'm convince I have that expression on my face at least 7 times a week lol. I can't promise my clothes always match either. There's a million things going on in their heads and you just operate whether it's a green or red light. You can always tell when you meet an amazing parent too. It's in the details. It's in their aura. I spoke to my mom today and for some reason she was going down memory lane and reminded me of the things I use to do and the things I use to say. I felt really blessed and thankful that those details are important to her. Raising kids is hard work; it's the best gift too. The only one that counts to me really. Cheers to all of you guys in this community who have made me laugh when I needed it, who have tried one of my techniques or have literally prayed for a little break. Cheers to all of you that suck it up and kept on movin! The love is in the details and you have the honour of shaping kids! This post put a smile on my face. I love how there's this silent idea and effort of parents helping other parents. @issska is one of those amazing moms who puts her family first! Thank you @issska @rileyjden for the love! These gestures mean a whole lot! ❤️

Found these beautiful long stemmed mushrooms, I believe they're called Shimeji mushrooms. So I threw them in a pan and with a brief peek in my refrigerator, chow mein was born. Easy. I always say the true work is in the grocery store or market.

How pretty are these roasted garlic blooms? 'Treasured jewels' is what @nigellalawson called them on her show I caught many years ago. I get that now. And I'm not a vampire.

I think for most of my adult life, I've over cooked all types of fish and seafood. Until recently. This friendly salmon was a quick sear; I wrapped it in foil right after and it remained tender and juicy. Live and learn right? #fish #salmon #seafood
