Ready to be packaged and steamed-sealed. How easy is this? I threw a tilapia fillet on a baking sheet along with any veggies I had in the fridge. Add a little olive oil and pepper. It'll be done before I know it. Easy meals, that's my kinda thing.

From market to table. Unlike my tots I have to bug my husband to eat more tomatoes. (Read the benefits below.) And success. (Previous post reference.) This tasteful chicken breast is crusted with a walnut-pistachio-panko, seared and then finished off in the oven for 12 minutes. Like I mentioned, I'm trying to really replace my go-to ingredients that I've known all my life to ones that will benefit my body and my families. Walnuts: Walnuts are a great source of anti-inflammatory omega-3 essential fatty acids. Walnuts are also rich with antioxidants, including being a very good source of manganese and copper. They are also an excellent source of molybdenum and the B vitamin biotin. Walnuts are actually at the top nut for brain health. They have a significantly high concentration of DHA, which is a type of Omega-3 fatty acid. Among other things, DHA has been shown to protect brain health in newborns, improve cognitive performance in adults, and also prevent or ameliorate age-related cognitive decline. Pistachios: The health benefits of pistachios include a healthy heart, weight management, protection against diabetes and hypertension, and can also improved digestion. The vitamins, minerals, fats and protein in pistachios are all very good for you. Pistachios are one of the oldest nuts. And they are used all over the world.

I hardly cook with chicken breast because I use to think that there was almost more flavour and moisture in the thighs or legs. But with exploration in mind, I thought why not dive in. So today I've created a rub or crust made up of 1/2 walnuts, 1/4 pistachios and 1/4 panko crumbs. I made a choice today to take a few steps back. I was probably moving quicker than my thoughts at a rate that took over everything!! And often times I think we do these things without realizing - and then what happens next? Our daily intake of food takes a hit. I've put on my favourite t-shirt from target, stepping out with no makeup, packed some berries and a lemon infused thermos. And I'm feeling like myself. With a toddler in one hand, a book in my pocket and a packed picnic, slowing down is on the forefront of my mind. Life isn't always easy but it doesn't have to be hard.
