I love clean-out-the- fridge meals in the shop after events. // Mushroom Orecchiette with Blue Cheese and Thyme. // Here is a *very* rough recipe: 8 ounces Orecchiette boiled to al dente in heavily salted (should taste like the ocean) water. Add a tablespoon of butter to a hot skillet then stir in 8 ounces thinly sliced mushrooms. Add a sprig if thyme then leave the mushrooms to sear for at least two minutes over medium high heat before moving them around in the pan. Their edges nearly char while the flesh turns to the color of bittersweet chocolate. Add a couple of cloves of garlic that have been thinly sliced and a hefty pinch of salt. Add the pasta to the skillet along with a good bit of the pasta water then stir in about two ounces each of crumbled blue cheese and cream cheese. Stir until creamy and well combined. Behind the scenes we’ve been working on a project that makes me feel all fluttery every time I think of it. @kitchenunnecessary is a video series created to inspire adventure and enjoyment of the outdoors. And of course there’s food. We team up with some of the most talented and knowledgeable foragers, hunters, farmers, fishermen, etc. to guide us to the best ingredients. Slow roasted pears with salted maple caramel, biscotti crumbs and créme fraiche. // Brush the pears with maple syrup and sprinkle with sugar. Add fresh ginger, cinnamon, star anise, and cardamom. Use the same spices to make the maple caramel. Simmer maple syrup until slightly thickened, about five minutes or so. Somehow I think these lemons may have just revealed the “resolution” or intentions I’ve been so desperately seeking for 2018. Hear me out. They are a far cry from beauty pageant contestants. In fact they came in my @imperfectproduce delivery this week. They are speckled, bruised, soft in parts and incredibly inconsistent. (Sounds familiar 🙋🏼‍♀️) They would never make it to the supermarket shelves and yet today I covered them in a flurry of salt, tucked them into a jar and in one month’s time they will be fragrant, floral and the star ingredient in a Moroccan dinner I’m preparing here at the shop. (If you want to watch the process of making preserved lemon watch my story). // Beauty from imperfection and joy in it all. These are not “Instagram” worthy lemons and yet they deserve a place too. We all do.

These Maple Rosemary Walnuts were a big hit at our @gatherseattle party @notwithoutsaltshop last night. I didn’t write down the recipe but I’ll do my best to get as close as I can because I do think your holiday festivities need these. // Toast 2 cups walnuts for 10 minutes in a 350 degree oven. In a medium saucepan combine 1 1/2 tablespoons olive oil with 2 tablespoons maple syrup and 1/4 cup sugar. Bring to a boil then add 1 1/2 tablespoons finely chopped rosemary, 1 1/2 teaspoons grapefruit zest. Stir in the walnuts until coated and add a few hefty punches of flake salt. Transfer the nuts to a parchment lined sheet tray then roast for an additional 10 minutes or so.
