There’s absolutely nothing flashy or trendy about @springmarietta. "It’s not challenging food and, on the surface, not the most innovative stuff I ate this year. But it was some of the best,” writes @andrewoknowlton. "The shrimp bisque, as silky and smooth as any version I’ve tasted, was easily one of the most memorable soups I’ve ever had.” And, yeah, Knowlton has had a lot of soup. If you’re looking for a menu that's set up for maximal pleasure and fun, go to @giantchicago. Call it stoner food or comfort food, but at the end of the day, they’re serving the type of stuff you don’t just respect but *crave*. And that’s true not just of the chef-ified bar snacks—the shatteringly crisp onion rings, the labor-intensive waffle fries with Jonah crab salad (above!)—but of vegetable-focused dishes like corn salad or sweet-and-sour eggplant. They’re easy and pleasurable to dig into (you’ll never be given instructions on “how” to eat something). But if you actually try and break down what makes each dish so delicious, you’ll face a seemingly never-ending rabbit hole of textures and sauces and secrets. If you open the photo app on any BA staffer’s phone, you’re likely to see a photo of the clam toast at @hartsbrooklyn. And on paper, it's the same as any other clam toast: toast, clams, wine, herbs. And yet the thick-cut toast (from She Wolf Bakery), fried in good olive oil, rubbed with garlic, and piled with manila clams steamed open in white wine and tossed with a pancetta-fennel-onion soffrito, has undeniable heft. It commands your attention. And it's the ability that chef Nick Perkins has, to procure the finest basic ingredients—bread, olive oil, seafood—and transform them into some of the best things we've eaten this year, that earns Hart's the number five spot on the BAHot10 list. The vision at @misterjius is this: apply San Francisco’s ingredient-obsessed, hyper-seasonal, cure-it-yourself ethos—which chef @brandoj thoroughly absorbed as a cook at Zuni Café and Quince and the chef of Bar Agricole—to the canon of Chinese food that he grew up with and later studied in Shanghai. With menu items like potstickers dyed using purple cabbage and carrot (above) and BBQ pork buns that are made with Berkshire organic pork (obviously!), he’s proving that old Chinatown is the new Chinatown. The food aesthetic at @elskerestaurant, number two on our BAHot10 list, is hard to describe. "Perfect execution is the baseline, as it is at fine-dining restaurants of this caliber around the country,” writes @juliakramer. But it's where chefs David and Anna Posey go from there that makes Elske’s food feel so of the moment. "The dishes do not show off, or gesture in the direction of gimmickry. America’s best new restaurant of 2017, @turkeyandthewolf, is a sandwich shop fueled by nostalgia. Take for instance the fried bologna sandwich, influenced by the “sh*tty” version chef Mason Hereford’s mom made for him after school. In his (above), three slices of locally made bologna are griddle-fried, blanketed in American cheese, and stacked on thick-cut, butter-griddled Pullman slices with house-made hot mustard, Duke's brand mayo, and "shrettuce" (what Mason calls shredded lettuce). It’s further crunchified with two fistfuls of vinegar-brined potato chips. It seriously rules.
