LUNCH LIFE // The Regular at @origindallas — sans onions [high fodmap] and subbing olive oil for their housemade honey vinaigrette — though I confess to dipping my fork in it [just once] because it’s JUST THAT GOOD. Honey sends my entire body into immediate inflammation. I also have to be careful with Brussels sprouts, but it’s all about quantity, and I only ate half of what’s shown]. The dirt on my 1 tooth cleanser: it contains possibly the most magical combination of ingredients ever (no dirt, though there is clay!), including myrrh, the amazing little essential oil that could. Myrrh oil is antibacterial and anti-inflammatory, meaning it not only purifies your mouth, but helps to relieve gum sensitivities and gingivitis. I’ve noticed considerable improvements in my sensitive gums in the month plus that I’ve been using this product. I was a little leery of a powdered tooth cleanser but was pressed upon my first use. tbt to the January I turned 28 — a time when eating healthy was a choice, not a method of survival (though either way, @birchwoodcafe is simply essential 😋); when it simply meant farm-to-table and organic — and I wasn’t worried about avoiding fodmaps and nightshades and starches and grains; when date balls didn’t cause an immediate inflammatory response; when I had healthy hair and glowing skin and my biggest worry was what pair of fingerless gloves to wear to brunch. - - ➳ FAST FORWARD four years and here I am, sitting in a chair with an IV in my arm, undergoing treatment with a new device that will hopefully contribute to me getting my life back — and here’s what I’m compelled to share: chronic illness doesn’t happen overnight. Underneath that seemingly healthy surface was a thyroid already being attacked, a gut void of the healthy bacteria necessary to fight off an invading virus, adrenals under constant stress, a whacked-out reproductive system waved off by doctors as the result of an athletic body composition. I was a ticking time bomb going through life at lightning speed, ignoring the systemic need for balance in all things — letting the ignorance of medical professionals support my desire to overlook abnormal symptoms because I didn’t “feel sick” — as well as the cry of my soul to spend more time being and less time doing. - - 10 months later, all of that changed, and in the four years that followed, so have I. My illness has intensified, but so has my faith. The combination has increased my resiliency. I’ve learned to listen to my intuition, to listen to my body. HOW TUESDAY TASTES ... best served with a nut milk latte and a smile ☕️ 🍪 \\ plant-based, flour-free, with NO added sweeteners of any kind, these dark chocolate “blondies” are 💯% breakfast approved (you can even eat them on the Whole 30). Recipe below: - - - The base: 2/3 cup Japanese sweet potato (baked, then peeled), 1/2 cup almond butter, 1/2 cup coconut chips, 2/3 cup mashed banana 🍌 - The spices: 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/8 teaspoon ginger, 1/8 teaspoon cardamom, 1 teaspoon vanilla ✔️ - Other things: 1/2 teaspoon gluten-free baking powder, 1/4 teaspoon sea salt, 1 flax egg (mix 1 tablespoon ground flax + 3 tablespoons water and let set in fridge for 15 minutes to thicken) 👩🏽‍🍳 - Combine all ingredients, stir in 3/4 cup of @paschachocolate 💯% dark chocolate chips, spread in a greased 8x8 pan, top with additional coconut and bake at 350 for 20 minutes. I’m currently on a bone broth fast (what’s new 🙄), so naturally, I’m looking back at tantalizing food photos and realized I never shared some of these healthy nibbles from my recent east coast adventures. - - Boston is an incredibly friendly city for food sensitivities. The servers at almost every restaurant I visited were able to quickly identify what modifications needed to be made to what menu items to accommodate ALL of my food sensitivities. Plus everything was SO local and SO fresh 🐟 🌿. - - On tour: the BEST lobster roll (don’t worry, I consumed sans-bun 😬) and salad from sustainably-sourced @lukeslobster, a BYOBowl at @diginn (👈🏽 pleaaassse someone open one in Dallas!), cold-pressed morning essentials at @purecocobeet (I quickly became a regular), an incredible octopus over roasted and pickled veggies at @post_390, Sunday morning smoothies at Beacon Hill gem @pressedboston, the world’s cutest @chipotlemexicangrill, a spread of farm to table deliciousness at the downtown @hiltonhotels @finpointboston, baby squashes at the @bostonpublicmarket (my other daily stop), and two of my favorite finds at that very location: gut-healing @ossobrothbos and my one because-I’m-traveling indulgence, hot @tazachocolate in almond milk ☕️🍫😋 bucketlistboston

I’m not quite ready to share a New Years post, as 2018 has me standing before a chasm of many unknowns and I’m still processing how and what and when I will share those things. 🥕 But for now, I’m back in my own kitchen, recreating the salad with roasted carrots in lemon-tahini sauce I made about 15 posts ago [ingredients posted on December 10], and sharing it with you because it’s SO DANG BEAUTIFUL. I fully believe eating is a multi-sensory experience, not limited to taste and texture and smell, but also to sight. 🥗 So may your early days of 2018 be filled with food that’s as pretty as it is healthy, and may you stick with me a little longer, because I’m going to need each and every one of you as I venture into 2018.

How I love a rainy night ... and roasted carrots and thyme 😍. Since my body has been off of sugar for so long, sweet treats like these have become candy for the soul. - 🥕 - In addition to their earthy sweetness [that increases when cooked], a fun fact about carrots is that their high carotenoid content helps to lower and stabilize blood sugar. - Wash, drizzle in avocado oil [ @primalkitchenfoods remains my fav 🥑] and sea salt, and roast at 400 for about 30 minutes. Add a few sprigs of fresh thyme when about 7 minutes of baking time remains, and serve drizzled in heart-healthy olive oil, the goddess of all vegetable toppers. thymetoeat justyum

Sipping on copious amounts of bone broth and catching up on some reading today in between periods of rest as I nurse a nasty case of sinusitis. Having spent the first half of this week in a work retreat focused on improving the health of people + planet through sustainable architecture, I’ve been encouraged and inspired today reading in @gbdmagazine about universities embracing @living_future Living Building Challenge and combing through my email to find @mindbodygreen identifying protection of the planet becoming integral to wellness routines as the 1 wellness trend to watch next next year. - Our bodies and buildings - and the environment both reside in - cannot and will not thrive unless all function as integrative, regenerative systems. Interestingly, all perform best when most in sync with nature, which is more than consuming kale and building with bamboo. - It’s about inputs and outputs - altering light exposure to increase sleep, which in turn reduces stress, inflammation, hormone disruption and disease - returning the body’s rhythms to equilibrium; switching to clean energy sources while at the same time reducing overall energy consumption; designing with materials that don’t require manufacturing processes that dump carcinogenic and endocrine-disrupting chemicals into our groundwater; making cities more walkable, benefitting the body on multiple levels and also reducing vehicle emissions; the list goes on. - I’ve barely scratched the surface of what I hope will dramatically change the way we live and do business in the immediate future. It requires a fundamental mindset change that includes recognition of the complex, interwoven ecosystem we are a part of, and an intentional overhaul of the way we view consumption on all scales. - ... I know what this looks like. You’re wrong. Those are not tomatoes 🍅 on that salad. They’re pan-roasted 🥕 browned in my @lodgecastiron skillet and dripping in a lemon-tahini sauce. This whole salad thing just elevated a bit, did it not?! . This vegan lunch is dairy-free, gluten-free, grain-free, nightshade-free and nut-free...about as anti-inflammatory as it gets. Arugula tossed in olive oil and sea salt, the lemon-tahini pan-roasted carrots mentioned above, a heaping spoonful of @manitobaharvest hemp seeds, and topped with fresh broccoli sprouts and more lemon 🍋 and olive oil. It wasn’t as yummy as it sounds - it was better! . And it photographed so beautifully I’ll probably have to post about it again. Thought hemp seeds are insanely awesome protein sources, if you wanted to add even more, roasted chickpeas would be delicious on this, as would chicken as an omnivorous option. . saladsunday hereismyfood

The first step in thriving in the midst of chronic illness is understanding what it is, uncovering why and how it developed, and finding methods to reduce inflammatory response. These content-filled and application-focused books do just that. I refer to the top book as my “Thyroid Bible,” referencing it constantly as a tool to evaluate my most recent test results and SO much more. Most who are diagnosed with one autoimmune disease end up with three, and if female, the odds of one of them being thyroid-related increase significantly ... which is why I recommend both books regardless. . I’ve received SO many requests for the quinoa sweet potato stuffing stuffing I posted about last week, so before I forget what I did [which I have a tendency to do...] here it is! It actually makes a delicious plant-based main dish served atop a bed of greens in olive oil, so don’t wait until the next holiday to try it out. - MAKE IT: boil 2 cups of quinoa in 4 cups of your broth of choice. Once boiling, reduce heat, cover and simmer 10-15 minutes until broth is absorbed. Meanwhile, chop 4 stalks of celery and dice 4 cups of sweet potato. Toss sweet potato in avocado oil, sea salt and 1 tablespoon of fresh rosemary; roast at 400 until slightly browned and softened. Sauté chopped celery with 1 cup fresh cranberries in avocado oil with 1 tablespoon fresh rosemary, 1 tablespoon fresh thyme, 2 teaspoons fresh sage, 1 teaspoon cinnamon and sea salt. Once cooked but still slightly crisp, add to quinoa mixture. Gently stir in sweet potatoes; add more sea salt and black pepper to taste. Scoop into a small round baking dish and top with 1 cup chopped pecans. Bake at 350 until pecans are just slightly toasted [10-12 minutes, most likely]. - holidayrecipes quinoa glutenfree paleothanksgiving

Revisiting last Monday’s farm-to-table lunch at @jwmarriotthotels Cedar + Stone Urban Table, where the interior materials are as locally-and-sustainably sourced as the food. I was thrilled to discover this destination at the @mallofamerica, which has long been a healthy food desert. The service was outstanding, the atmosphere warm and inviting - the space bathed in a wall of northern light, and this bowl of local farm lettuces, spiced walnuts and salmon dressed in a seasonal apple vinaigrette [what is more Minnesota than 🍎 🍏 in the fall?] was absolutely delicious. So long, November 👋🏽. I’m entering the final 31 days of 2017 [which also happen to be some of my final days at 31!] with one intention: managing stress. - I’m in a season when reducing stress doesn’t seem to be an option in the immediate present [though it’s a major life goal, as November’s stresses - physical and mental - kind of wreaked havoc on my health] so what I do to address it will be my pendulum shift. Managing stress requires two things my body and mind are craving right now: mindfulness + balance. - The HOWs to my what: PRAYER - beginning and ending each day with focused time realigning my heart in what I believe will bring more healing than any treatment can 🙏🏽 MEDITATION - actually using my @headspace app for more than just its daily push notifications reminding me why I need it and carving out time for short segments in the middle of each day, twice a day, to calm the chatter ✨ EXERCISE - a minimum of 20 minutes a day, no exceptions, whether that means rebounding and body-weight training at the foot of my bed, a walk or going to a Pilates or barre class 👊🏽 ... [also on the agenda: yoga 🧘‍♀️ once a week] - And so it begins. December Intention Day One.
